I recall a few key moments from my first day at culinary school…

I remember being lined up in my Chef’s whites, all the students in a neat little row. I recall passing a corridor somewhere and seeing a wall of fully stocked cellar fridges, multiple store rooms and being told somewhere behind that door was a fully furnished hotel room with en suite and reception area for the Hotel Management students. I mostly remember a tour of the Pastry section where the senior students had just, only just baked a whole cart of sugar cookies.

I still recall the smell of fresh cookies wafting through the air. It was a sugar cookie bouquet…..
