Heston & Hospital week…

This week brings two big events. The first one will be a trip to the hospital, (not me!) but my loved one who goes under tomorrow to have his wisdom teeth removed. Therefore, it’s safe to say I’ll be blogging about soups, jelly, ice-cream and stews for the remainder of the week, getting excited aren’t you?

The second event is a one night only ‘Live’ Theatre event, with my favourite culinary genius of all time Heston Blumenthal. I’m not sure as to what will be happening, but it’s a fair certainty he’ll be cooking, entertaining and hopefully letting us in on the secrets to being a Michelin superstar chef. Sadly as I live on the other side of the world here, it’s no.1 on my Foodie Bucket list, so fingers crossed I’ll get there one day to sample their fine food in the UK (note to self, buy lottery ticket)

Which brings me to the next question…have you ever wondered what a Three Michelin star chef might cook at home? Here’s a little intro by the man himself to his latest cookbook Heston Blumenthal at Home

In honor of this great chef and the fact it’s my (sweetheart’s last solid meal for the next few days) I endeavored to tackle no less than three recipes from his cookbook. The results were greatly appreciated and I hope you’ll forgive that I’m trialling these for the first time so they’re not picture perfect, but hey, you know what they say about practice…

Now we love our chippies in this house, but why cook them once when you can thrice cook these beauties! They’re described as having a “crisp, glass like interior,” yes please!!!

And lastly but not least, a beautiful dish, so lovely I was surprised by its simplicity too. Vanilla butter & Sea Perch. Vanilla butter & Seafood is my new vice!!!

Snap shots & food shots…

I love cooking, I enjoy the details, the fussing and the process as much as anyone else. Sometimes though, I enjoy a quick as-a-flash meal that has as much fuss as tying my shoelace, (if you get what I mean.)

Here are a few snapshots of the kind of meal or snack or side that can be made in under twenty minutes! I hope these might come in handy for you too someday…

Garlic prawns, peel them, add chopped garlic, a sprig of thyme and season. With a generous knob of butter, crusty bread and some lettuce you have some tasty fillers in under twenty minutes I’d say.

Pea soup with Parmesan & cracked pepper I made this simply by boiling frozen peas and spring onion shoots in plain old water. After cooking for 5-8 minutes or so I left it to cool, blitzed it and served with (pre shredded parmesan) & cracked pepper. It’s vibrant, quick and tasty too…

I’ve only recently added these Ricotta Dumplings into my repertoire. A small tub of cheese, one egg, some chopped spring onion shoots & a few tablespoons of flour. I make rough pillows of the dough and pan fry or boil them. I reckon this takes just under 5 minutes to mix and not too much more to make little spoonfuls of the batter. Yum, yum, yum…

Sponges don’t wear square pants…

Very busy in the kitchen lately. Baking sessions at school, baking sessions at home! You name it, I baked it, pizza, yes, sponge cake, yes. Bread & butter puddings or Sourdough rolls (at home) with a slow rise 3 day ferment, yes!

This is definitely a food frenzy moment…

Cheery Chorizo and cold autumn days…brrr…

Sunny, bright days and warm sunshine…Not here! Try random cloudy days, drizzle with frost and wind that blows and howls at the glass when you step outside. Yep, it’s official, autumn is truly here and big brother winter is on his way.

So, time for a little cooking therapy. A bit of spice always warms things up and for me chorizo, chilli & veg is my go to. It’s a bit of a paella-style rice and it’ll definitely cheer you up on a cold autumns day, Cheery Chorizo Rice

Ladies of the night…eat pasta!

Love a short cut meal. If I can boil water, chop up veg and crack a tin of tuna, I’m happy! The origins of this sauce refer to ladies of the night who used to entice their customers with the scent of this sauce. Others suggest it was a short cut quickie to create a great sauce from odds and ends in the house,

Spaghetti alla Puttenesca can be found here on the wikki. A whole plethora of ingredients might be used from a combination of spicy chillies, loads of garlic, fresh tomatoes, anchovies, capers and olives (whew!). I also detour from the original version by adding a little extra protein in the form of chunky tuna and crunchy green beans!

Simply get some pasta on to boil. Chop those veg and get them sizzling. Combine to serve and you’ve got a meal pronto!
