I wish I knew the muffin man who lives on Drury Lane. It would make my mornings sooooo much easier! Actually, as this is my first morning back home I couldn’t resist the idea of freshly baked goods, in my PJ’s and a bit of quiet time (whilst I get a weeks worth of holiday washing done this morning!)

Time: 20 mins to prep the batter, 20-25mins baking time
Ingredients: makes 1/2 doz medium sized muffins.
1 Apple peeled & diced
3 Dried Dates chopped (optional)
1 cup plain flour
1/2 cup raw sugar
1 tbsp cinnamon
1/4 tsp bicarb soda
1/2 baking powder
Soft butter 100g (in my original recipe, I stated 150g. I’ve since then revised and re-tested and found the 100g quite sufficient.)
1 whole egg
Splash of milk
Pinch of salt
Raw oats, plus extra raw sugar & cinnamon to sprinkle the tops,
Mixing bowl, sieve, muffin tray, paper muffin liners (or use ones for cupcakes) spatula and spoons for mixtures,
Preheat oven to 180C (356 F) add muffin liners to trays.
In a medium mixing bowl, sift flour, bicarb & baking powder, followed by the cinnamon, raw sugar and pinch of salt, Add chopped dates if using too.
Next add softened butter, egg and the diced apple. Add a splash of milk to correct batter consistency too.
Stir gently to combine, being careful not to over mix the batter. I added another splash of milk at this stage.
Spoon the batter into the muffin liners.
Be careful not to overfill as they’ll increase in size. Garnish raw oats, sugar and cinnamon on the tops of each muffin, bake for 20 mins.
Ideally they should rest for 5-10 minutes before devouring, plus no one wants to burn their tongue! ;)
