Snap shots & food shots…

I love cooking, I enjoy the details, the fussing and the process as much as anyone else. Sometimes though, I enjoy a quick as-a-flash meal that has as much fuss as tying my shoelace, (if you get what I mean.)
Here are a few snapshots of the kind of meal or snack or side that can be made in under twenty minutes! I hope these might come in handy for you too someday…

Garlic prawns, peel them, add chopped garlic, a sprig of thyme and season. With a generous knob of butter, crusty bread and some lettuce you have some tasty fillers in under twenty minutes I’d say.

Pea soup with Parmesan & cracked pepper I made this simply by boiling frozen peas and spring onion shoots in plain old water. After cooking for 5-8 minutes or so I left it to cool, blitzed it and served with (pre shredded parmesan) & cracked pepper. It’s vibrant, quick and tasty too…

I’ve only recently added these Ricotta Dumplings into my repertoire. A small tub of cheese, one egg, some chopped spring onion shoots & a few tablespoons of flour. I make rough pillows of the dough and pan fry or boil them. I reckon this takes just under 5 minutes to mix and not too much more to make little spoonfuls of the batter. Yum, yum, yum…

Count me in as a third dumpling lover! I MUST give these a try! Is it just enough flour to hold together? Maybe potato gnocchi-like?
