Weekend fun & Sunday night Schnitzel fest!

Finally settling in for a cosy evening & Sunday night calls for some Apple, Coriander Sauerkraut & Sunday Schnitzels. Why not enjoy a few steamed veg on the side, a little Telly and a foot rub (if you’re lucky…)

Schnitzels are an ongoing theme here on cosy evenings, I’ve enjoyed, Chicken Kiev, Chips & home style Slaw… in the past and this apple & coriander sauerkraut is the perfect accompaniment to a crunchy schnitzel. Simply omit the garlic butter in the (previous recipe) and add some warm steamed veggies on the side for this dish.

Time:15 mins

Ingredients:

1/4 savoy cabbage, shredded
1 brown onion, diced
1 apple, diced
1/2 lemon
Knob of butter
Few sprigs of coriander
Salt & pepper to season

Method:

Add the diced onion to a pan with a bit of the butter, sweat for a few minutes

Add the shredded cabbage & diced apple, stir to combine.

Throw in the knob of butter and a good squeeze of the lemon. Season to taste and switch the heat off. Snip some coriander and stir through the sauerkraut. Set aside and serve with the schnitzel and veg.

      I’m glad you appreciate the Frenched bones Deb, I think they’re just a handle to everyone else, just to hold the breast up and munch! But it sure does make a difference to the final result & presentation…

      Lol, I’m still envious that you’ve eaten at both The Fat Duck & El Bulli so we’re pretty even! Just think, schnitzel could be on your next menu! After outstanding breakfast tortillas of course!

      One of the best things about the city is the harbour views and Fort Dennison is right in the middle of the harbour so you’re just surrounded by clear blue water and skies (hopefully.) Also they fire a cannon every day on the hour so there’s a lot of history surrounding the fort…

      It’s a truly beautiful location. The fortress is located in the middle of the harbour and surrounded by nothing else. The fish & chips tasted lovely and yes, it was a good day out. :)

    That sounds like a wonderful weekend! I know, everything does taste better eating outside in the sunshine, and to look at the food you were eating, I can see why you had a good time! You deserve to have a foot rub, you work so hard!!
