Wild Rice is the key to this healthy salad, just a few veggies, some pickled wild rice and no guilt, (well hardly any!) Best served warm with some extra protein if you like, shredded chicken, tofu or even haloumi fritters would be lovely, Pickled Wild Rice Salad

I agree! For me pumpkin is a cooler weather food and I always love a salad with that, spinach and pine nuts too mmm…

I’ve never heard of pickling rice! I’m intrigued, especially as I’m chomping on a salad right now!
It’s similar to sushi rice when it’s made with some vinegar & mirin, just gives a subtle tang. As I like stronger flavours (or my palette does, lol) I premade the rice & soaked it with the brining solution. It’s more of a garnish for this dish too, like a nutty sprinkle…
