Soba, Soups & Sprouts…

Dinner for one tonight. Sometimes I crave something clean, healthy and simple. With a bit of indulging on the side from time to time, (ahem) it’s nice to make something with a few basic pantry items and good old fashioned H2O from the kettle.
I think Soba Noodles fit this bill!
To start, you’ll need some Soba Noodles & Dried Chinese Mushrooms. I like to add a few drops of sesame oil & a splash of soy sauce in the hot water when boiling the noodles and mushrooms together.
Simply bring to the boil until al dentè and serve with some fresh Bean sprouts, Coriander, sliced Spring onion and crispy asian shallots. Season to taste with a little more soy or sesame oil and you’re done!

Yum! I do a version of this at least twice a week, using the same noodles! I had it last night & was going to have it tonight but I picked & picked at my daughters’ dinner & I no be hungry any more

This looks like a comforting soup with some great fresh ingredients.
It’s a lovely fresh dish and perfect for no fuss meals.
I think I’d rather a piece of those individual wedding cakes from your sister’s shower though with fudge choc frosting

We have tons of extra fudge in the freezer right now. My Mom is always worried about not having enough
So my sisters will be eating fudge for breakfast, lunch and dinner in the next few weeks.

Soba soups and salads are always a favorite of mine and, like you said, a happily simple treat to put together.
I agree, everyone loves a time saver and it’s so economical too. We always have a few pantry times on hand and Asian noodles and Soy seem to be popular ones!

I know a few folks out there make this sort of thing all the time but I just figure a few food happy snaps gets everyone inspired! We’re always cooking this side of the hemisphere!

Still have some Bonito flakes in the closet, never used them before, not sure what I’ll do with them yet..
