Rosti with the Mosti!
Apologies folks for yet another quick post today. There are looming deadlines above my head and the homework, work stuff and life in general have been building up! Hence! I need quick food, tasty food and comfort…. Did someone say Brunch? Yes please!
Here’s something we’ve been playing around with at school over the last weeks:
Potato Rosti
Allow one medium potato per rosti cake.
Boil the potatoes whole with skins until nearly cooked.
Peel the potatoes & grate the flesh to form a large patty. (I like to wet my hands when forming the patties.)
Pan fry rosti in hot oil with a little butter until golden & crispy on each side.
Season well with salt and serve with salad greens & lemon cheeks.
