Spaghetti Confetti
by girlinafoodfrenzy
Here’s a light and healthy lunch which you can enjoy on those quieter days, when you want something fresh and wholesome, but not too fussy. It’s simply spaghetti dressed with a myriad of lovely, bright veggies which I’m calling my Spaghetti Confetti. It’s still winter here of course, but I think I’m trying to cheat my taste buds into thinking that spring is on its way. What a shame my brain tells me otherwise!
I think this dish is best served and eaten on the day. Depending on what variety of veg you use, will determine how much colour those strands of spaghetti take on (and I’m not too sure that folks want to eat leftover purple pasta!) If you’re worried about the colours being too dark then steer away from purple carrots, beetroot or anything of that nature! I am however fanatic about purple carrots at the moment, but I think that’s the designer in me. Hope you enjoy…

It is most colourful and pretty my friend – when I first heard the title I thought you had made sweet spaghetti

Lol, hope I didn’t disappoint Uru,
but it was certainly wholesome, pretty & tasty!
Its Coming! ITS COMING! SPRING IS COMING! Wishing you good thoughts and days! I love the colors in your pasta! I’ve never had a purple carrot! I can see why you are attractive to this dish! It has eye appeal!
Definitely put those purple carrots on your foodie bucket list. They’re sweeter, tastier and so lovely! I’ve dabbled with them before, well worth the hunt if you can get them
This would taste great cold, too – as a pasta salad. You could simply soak the vegetables in an ice bath for 5 minutes, drain, and add to cooked, chilled pasta. A simple viniagrette, and you’re ready for summer
I was definitely thinking that! The radishes make a really lovely addition and to me, they’re so versatile all year round…
Love the ‘confetti!’ So cheerful and satisfying.
I love a silly name, every now & then! But truly, I was just craving some lovely veggies today.
Utterly gorgeous photos! I haven’t had purple carrots either, but I like the sound of them. It’s a strange thing but radishes have been really hard to get this year near me, I don’t know why, usually they’re available all the time. I should try growing them myself, because I love them, and I love the idea of mixing them with all the other delicious things in this recipe too.
Thanks Lorna, I think radishes are making a comeback in our household, we both seem to love them so much! Sorry to hear they’re a little absent so far this year (must be all those fragged, lol) Hope you have a great week.
This looks super healthy, and a great inspiration for my raw food cleanse coming up (after my birthday, of course!)!
It was definitely a very healthy dish, (I mentioned to someone) I felt healthier just looking at it too. Probably better for those warmer days that most of the northern hemisphere are enjoying now
Yes, we are! It will be your turn soon enough.
Such a pretty dish! I love all the colors and the idea of this. Perfect for summer!
Hi Alaine, thank you very much. I just felt inspired to eat a few of my favourite veg and was trying to incorporate them into something wholesome & light! Thanks again for stopping by.
Hi Alice. This recipe looks amazing!!! Very fresh and light and absolutely looks delicious!! Perfect for any meal!! Btw, sorry I haven’t been visiting your blog! It looks really great! I love the new layout!
Hey Sammi, thanks
it’s been a while but I figured you’ve been super busy and productive with other things. Hope you’ve been well though, I’m v glad you like the new layout too!
Can almost taste the freshness in this dish! Radishes can add so much to a dish, earlier in the year here in Spain there were so many they were practically being given away in the Market but I never get around to doing that much with them though apart from just snacking on them whole.I also really need to hunt down these purple carrots – stunning.
Thank you, I think I was channeling spring that day (even though we’re in the dead of winter here!) I love your food and photos very much and feel like I’m learning from all of the generous cooks, chefs, would be food writers out there and it’s such a pleasure to have great feedback.
Purple carrots are my latest obsession too, so tasty, nutritious and beautiful. My perfect trifecta
An absolutely beautiful dish!
Thanks mama, I was definitely pleased with the end results. Looking forward to seeing your food & celebrations for July 4th too!
