My soft & fluffy insides…my Marshmallow Meringue

Soft, fluffy, clouds of meringue, crunchy, nugetty bits of chocolate & nuts with just a bit of icecream on the side.

Apologies again, as I know it’s been a while.

There’s been a bit of work to do of late, getting into the full swing of work and school things. Hurried meals prepared before we dash out the door and some late night cooking (also hurried I might add) and thus little time to document those food snaps I love so much!

Finally, I did manage to think about the contents of the pantry and fridge. I had some time on a quiet afternoon and a few lonely strawberries sitting on the side waiting for me to come & play!

This is like a marshmallow & meringue had a love affair and this lovely confection was born of them both!

I also went the whole yard and smashed it up with some berries, Eton mess style.

Just a bit of veggie love today. Here are some of my favourite ways with veg, some of which you’ll be familiar, others which you might not. I’ll admit that not every meal is perfectly balanced in the giaff household but I will promise that I’m constantly looking for new & varied ways for us to enjoy bucket loads of veg!

Either way, I love these fresh and vibrant greens, pinks & purples. So let’s eat ourselves a rainbow today!

1. Pink Radish carpaccio style.
I love radishes. I love them sliced thin and simply finished with salt, pepper and some lemon zest. No cook, no fuss and you get to practice those knife skills.

2. Vegan Rocket Pesto with almonds & lemon
Got a box of salad greens you want to use quickly! Blitz a few handfuls of rocket (or watercress or spinach.) Add a couple of garlic cloves, some salt and almonds. With a good glug of olive oil, squeeze of lemon and lemon zest, you have an instant topping for pasta,
some spuds or even roasted tommy’s!

3. Overnight Cauliflower pickle,
I’ve found some amazing varieties of veggies of late, (purple carrots) and it seems Purple Cauliflower is the next giaff trend. A quick overnight pickle with some coriander seeds, peppercorns, some salt & sugar to taste. With one part vinegar and one part water to cover, the next day they look a lot more like this!

4. Pack a punch sauce,
Not a true peri-peri or a Chimichurra, simply a few basic ingredients which pack a punch. You already know I’m a chilli fiend, you probably know I’m a bit in love with coriander. With the addition of lemon zest, bucket loads of garlic and some olive oil, I have a sauce which can be used on most seafood, red meats, chicken. I might even toss it through hokkien noodles with fried eggs (Chinese style)

It’s not really a secret ingredient, just good cooking!

5. Roasted Tomatoes
I just had to include these favourites. Oven roasted tommy’s with a bit of salt, pepper and a teeny bit of sugar. There’s nothing nicer than the sweet taste of good tomatoes, standard yes…boring, never!

I love a lazy Sunday and I especially love it when I can finally go and spend some of my hard earned cash on all matter of lovely things.

Some of these items are gifts from wonderful friends, some of them are from Ikea, either way it’s such a pleasure to use your favourite things on a regular normal day, don’t you think?

One of my favourite things being cake and this weekend I spent some time in Orange cake heaven. A delicious cake perfumed with citrus and a light & buttery crumb. It was a cold day but thankfully we were much warmer with the memory of those lovely Australian Navels.

Short cut beef stew with Celeriac mash.

What if I promised you a shortcut beef stew that you could start a day or so beforehand and finish on the day within an hour & a half?

If it was packed with delicious veggies, lots of flavour and doused with red wine would it be better?

Also, how about substituting some of the regular old favourite’s, like a spud and trying something new like a creamy Celeriac mash

Sounds good. All you need is a plastic zip lock bag, a big old pot and a microwave to take you to this Short-Cut Beef stew with Celeriac mash.

My greatest love story of all… Brunch Time!

Brunch time! There’s a myriad of brilliant recipes out there for these delicious snacks. Traditionally made with a combination of both buckwheat flour & regular and often served with sugar & lemon, jam or even sautéed ham, leek & gruyere.

What’s not to love about the versatility of a good crêpe.

Two of my favourite go-to folk are David Lebovitz and Joanne Harris-The French Kitchen Both have simple recipes and gorgeous pictures (of course!) Let’s not forget, they also have beautiful stories of the country and food that is France, too.
