What’s up Doc? Aka Purple Carrot Tart…

Something tells me that a certain bunny may or may not just go for this tart. It has sweet roasted heirloom carrots, (purple being my favourite to date as you know,) which are then drizzled with honey, finished with a bit of salt, pepper, coriander seeds and thyme for extra fragrance.
It’s not inspired by much more than the need to cook some beautiful produce which happened to be in the fridge and to make a little snackette after shopping on Sunday. In fact, we found a variety of fantastic ingredients which I’m going to feature towards the end of the week, some of the familiar and some (not so familiar of course!)
In the meantime, I’m hoping you’ll enjoy this Carrot tart with Honey & Thyme and savour in yet another delightful way, to eat those veg…

Wow……I love purple, yellow and red carrots….but you can’t find them here….waaaaaah! Looks amazing, and I am sure it tasted amazing as well! Great idea.
Thanks Carla, its definitely a nice way to celebrate those lovely veg, I cant wait to get my hands on some heirloom seeds, (I’m still looking…) I’m so surprised you cant find them over there, with the fantastic variety of continental produce in the UK?
Ummm…..yeah, but I live in Barcelona…..so many UK things don’t get here. They are very proud of their produce. Maybe in a couple of years. If the Spaniards don’t think that purple carrots are “just too weird”

You love those purple carrots! Eh! Still have not tried them! The colors are so vibrant and It all comes together so well!
I promise to use some other veggies in the future, but you know they are in season and since I missed out on my bright orange (pine mushrooms) this year I’ll just have to see what other wacky vege i can surprise you all with!

Simple food is really the best food! I tend to have some great vegetables that I need to use up and often it’s just soup or salads but not that day, I got very inspired

Lol, it’s funny to think of good as fashion but I think that purple is the new season colour for me! As for the honey it always brings a little something to my carrots, but I think the thyme and coriander definitely make it better.

it was a nice little experiment and basically looked like a dainty rustic tart with lots of colour and herbs. I was definitely happy with it.
