My soft & fluffy insides…my Marshmallow Meringue

Soft, fluffy, clouds of meringue, crunchy, nugetty bits of chocolate & nuts with just a bit of icecream on the side.
Apologies again, as I know it’s been a while.
There’s been a bit of work to do of late, getting into the full swing of work and school things. Hurried meals prepared before we dash out the door and some late night cooking (also hurried I might add) and thus little time to document those food snaps I love so much!
Finally, I did manage to think about the contents of the pantry and fridge. I had some time on a quiet afternoon and a few lonely strawberries sitting on the side waiting for me to come & play!
This is like a marshmallow & meringue had a love affair and this lovely confection was born of them both!
I also went the whole yard and smashed it up with some berries, Eton mess style.

Hopefully folks aren’t too disapointed that I’ve posted two desserts in the past week or so! I promise, we do eat things other than cake in our home!

Thank you! Meringue is so versatile too, I even thought of blow torching the meringue direct onto the plate with strawberries & ice-cream but figured I could hardly call that baking!
Oh…my…goodness! Fluffy, pillowy meringue with almonds, berries and ice cream?? Wow. It’s lovely, Alice. I want to reach through your picture, grab the bowl of meringue–with ice cream, of course–and eat it…and lick the spoon after I’m done. Gorgeous pictures!

As for the marshmallow bit it really did remind me of something soft and oozy and I’m determined to play around with the recipe more (down the track!) one bowl coming right up, might take a little while if I have to fed-ex it over…
How beautiful does that look? And the berries would have added that bit of tartness. I really like the font you have used over the meringue picture.
Hi Meenakshi, the berries were a lucky find, very pleased to see some from North Queensland that are still tasty and from Australia! As for the txt, I overlaid it using the Phonto (app) I use it for iPhone & iPad but it might work on Android too (depending on what you use…) Good Luck!
Oh thanks!! I am not an apple user but perhaps it will work on android. I wish we had access to more berries in India! Our strawberry season is so short. Will enjoy mangoes and bananas till then!
Hopefully you can still get phonto (or an android) equivalent on the app store. Re mangoes and bananas I think they’d be equally tasty in this dessert, cheers

Hi CCUru, I know that you wouldn’t mind that I’ve posed two desserts in the last week! As for the meringue it’s so simple and I often have frozen egg whites on standby, just in case I want to bake. So this was one of those just-in-case days!
Oh dear. That looks just ridiculous. I absolutely love meringue….and have a love affair with marshmallows….and you put the two together? Genius! The pictures are stunning too, Alice! I think you should come to my house and make this for me! (Cause you know when someone makes you food it always tastes better.) I’ll make the dinner, and you make the dessert! Absolutely fabulous. Love it. And good luck with school and things…..I know I will be like that again in September…have been loving my holidays so far!

Well you do live in one of my dream destinations being Barcelona so yes, when I finally have money saved for that World Trip I’ll swing by for one of your fantastic dinners and I’ll make dessert. Regarding the meringue it’s a lot softer so the texture is similar to marshmallow. Would it help if I told you the top was pillowy too
