Snap, Crackle & Pop part II

There aren’t too many meals out there which can bring a grown man to his knees. Though one of these, might just be a Pork Belly roast.
Glistening jewels of juicy pork, braised apples & fennel and the crisp crunch of the snap, crackle & pop when you bite into the perfect pork crackling. Ok, it’s enough to bring even me to my knees!
It’s a simple love story of a Pork Belly married with apples & braised fennel. Lovingly put to bed for a few hours after which, the said ingredients magically meld and become a caramelised braise and crunchy mass of goodness!
Tell me, is this the kind of meal that could bring you to your knees too…

I imagine there’s some wonderful magic you can work with your sous vide and a blow torch, no doubt meltingly tender pork belly is a mainstay in your household
OK. I am now absolutely stuffed, as is Baby Lady and Quickstep. Wonderful crackins and tender, moist pork. Loved the apples and fennel. It’s such a great combination. Added some butternut squash and finished it with a Bourbon sauce. Killer meal!!!!!!!! Thanks.

So true. There is not much I wouldn’t do for that perfect piece of pork or lamb…:) this looks perfectly delicious!
I do start to get impatient after the cooking for the first 2 hrs but (just console myself) that the effort is truly worth it in the end! There’s not much I wouldn’t do for the perfect piece of pork crackling either
I think a slowly braised tender pork belly, complete with the perfect ‘snap’ of crackling is enough to have anyone anyone on their knees, and with the addition of fennel and apple, I think your roast is pretty unbeatable. Thanks for sharing
Hi Fiona, thank you! I just enjoy trying different techniques for the best result and I think it’s getting pretty close. As for apples and fennel, they’re a definite match made in heaven
I am on my knees. It looks awesome. And that coming from somebody who has just cooked cider soaked pork belly with apple and onion. A post that will be a couple of weeks away because I am pretty well organised at present.

Delicious, I certainly look forward to seeing that post. Cider and pork (or ham) is a must as the weather gets cooler in the northern hemisphere. I’ve just enjoyed my bout of Winter Warmer’s recently, so opting for (lighter fare) but that shan’t stop my food stalk to all the other blogs in the meanwhile.

But truly, it’s the best, not only in regards to taste, but texture and sound! It’s the dish that keeps on delivering.
Oohhh, this sounds good. I’ve never made pork belly, but I’ve enjoyed it in restaurants. The apple and fennel combination sounds like it would take this over the top, as I can just imagine how they would carmelize and contrast with the snap/pop factor.
I think it’s a very economical cut of meat too. The left overs are fanatic with vermicelli noodles, salad greens and fish sauce. My sweetheart also likes a plain old pork belly sandwich with lots of mustard and lettuce too

The nicest bit is the smell of pork and apples in the air, so sweet! As for the crackling his eyes did light up quite a bit
It will be a while until I make it again though, I’ve only ever made it three times in all these years. Dreadfully tasty and calorific as all yummy things are…

Lol, I’ve been enjoying a few favourites (revisiting old techniques) to improve my cooking. I know it’s pretty. Bold to showcase ‘that much crackling’ we didn’t eat it all in one sitting, I do eat leftovers too
