There are some foods out there which taste of the sunshine. Sun ripened tomatoes, the juiciest fresh melons and citrus flavours which burst with tang, zest and zeal! For me, one of my favourite flavours would be Lemons.
This recipe comes tried and tested from the upmarket UK superchain Waitrose. I’m not familiar with their products but I know of the chain and apparently they hold a Royal Warrant to supply groceries to Queen Elizabeth II and Prince Charles, so I figure they must be onto a good thing!
Of course I had to Giaff this one a little, so I’ve added in some lemon zest & juice to lighten the flavours which you’ll hopefully enjoy in this Lemon Cake with Caraway seeds
This one has been taste tested on some of my work colleagues and got a big thumbs up of approval! Dare I say part of this cake has some nearly royal approval???

Sounds delicious. Waitrose is the best grocery store. It’s the only place we shop in the UK and better than any grocery store I’ve been to in the states except one in Seattle. Can’t wait to make this recipe!

My mouth is watering at those lemon photos and the thought of this cake. I’m sure Her Majesty would give you the thumbs up, and down a slice with a nice cup of Earl Grey, which is said to be her preferred teatime tipple.

You will find fennel in almost every sweet dish in Bengali cuisine. We are made of fennels and nigella seeds I have often said.

Thank you, lol but I should point out that this is a lemon cake with caraway seeds! Ha ha, but I imagine an apple with fennel seed cake would be equally lovely, perhaps you’ll have to rethink the creation for your blog instead

Hi Fiona, thank you! There’s something about teacakes which makes it special because it can almost be enjoyed as much as that other everyday ritual a good ole cuppa! But yes, the lemon and caraway seeds is so indicative of those great flavours from the UK.

So many of my cakes are shared with hungry colleagues and friends. I know to try and make the home cakes in smaller ramekins for the two of us, although, sometimes on special occasion or hectic weeks (warrants the need) for sugar or indulgence

Hi Hungry Mum, there’s something quintessentially lovely about an afternoon tea cake with lemon and the addition of caraway just made to more special. There are some heavier versions out there like a pound cake with butter, but I rarely say no to runny, sticky icing
