Or how about that ever effervescent of goddess’s Nigellisima of Nigella Lawson-eggs in purgatory fame. A few pantry staples and you can take that humble egg, from drab to fab, in no time!
List of Ingredients, as appears in video: 1 or 2 eggs, per person, 1 can of tin tomaotes (allow 1/2 can per serve) Your choice of fresh herbs, I’ve used oregano today, Chorizo Sausage- feel free to omit, a bed of lentils could work well as a substitute. 1 tsp of freshly chopped chilli, 1 tsp of freshly chopped garlic, salt & pepper to season, Garnish with extra chili flakes & chopped spring onion to serve,
