Hello Foodies & Friends!
Do you remember my post With Love from Bali some time ago? Well back then, I remember promising a delicious, fresh and (somewhat) healthy dish which channeled all those wonderful flavours from that inspiring cuisine.
There were so many choices, Satay, Mi Goreng, Babi Guling (aka suckling pig, but where would I find a whole one in Sydney, etc.) and so the list went on.
Eventually, I decided to make use of a few lovely props & tins, which I found whilst abroad. Not content with the piles of holiday paraphernalia building up, I wanted more! (Luckily, my sweetheart kindly agreed, being the good soul he is!)
Not only that, but I had to add a few shortcuts, as I know (so many of you) are pushed for time in the lead up to the holiday season and end of year! So yes, there’s a cheat’s shortcut to a spicy & delicious satay-style peanut sauce too, it’ll literally take 2 mins and you’ll be amazed, (I hope!!!!)

There’s also a new technique (for me anyhow,) in using fragrant banana leaves to wrap some delicious steamed coconut rice parcels. Just in case you wondered how to use these green banana leaves, (you can of course) view the video to see me toasting them over a live flame.
Bonus, we later grilled our parcels on the BBQ too. I can’t begin to tell you, how amazing that smokey coconut rice was, as it steamed on the BBQ out back.
That’s the true joy of summer approaching in the Southern Hemisphere and yes, also part of the joys of travel and always trying to re-create those delicious flavours abroad, right back in your own home & kitchen!
