Move over Prawn Cocktail, there’s a new kid in town. She’s fast, delicious, healthy and fresh. It’s the light flesh of a juicy pineapple, married with lemon, chilli, green coriander, mint &; prawns. Yes ladies &; gents, it’s a fresh Pineapple & Prawn Ceviche!
This is a dish I’ve wanted to try for aaaages! In fact, my little sister beat me to it once and made a great tomato filled, lime & zesty concoction of mixed seafood. I’ve seen delicious ceviche style dishes around for a while and finally decided to get down to it.
..,the only problem being, is that I don’t like mushy food (err, who does?) So very many of these dishes called for citrus segments, mango, melon…these are all soft foods people!
I wanted to find a delicous alternative with a little acidity to help the cooking process…lo & behold, pineapple it was!
Being closer to the summer months here in the Southern Hemisphere, we recently dined somewhere (where,) a delicious scallop ceviche came forth. It was topped by golden spoonfuls of grapefruit granita, curls of fennel and suffice it to say…it…was..heaven!
Ok, it was the Four Seasons, so of course it was heaven!

It’ll welcome in your weekend, on a especially high note!!! For those who are not, (but you’d still rather pretend) it is searingly hot outside, this would make the perfect appetizer in the lead up to holiday season. True!
Pineaple & Prawn Ceviche
Ingredients: (serves 4)
1 cup diced pineapple (if possible, save some juice whilst chopping too.)
1 Lebanese cucumber, diced
1-2 red chillies, deseeded
Handful of fresh mint & coriander, chopped
1 lemon juiced & zested
(Extra lemon, 1/4 in wedges to garnish later)
6-8 fresh raw prawns, chopped roughly
1 tsp sea salt
Salt & pepper to season
Extra virgin olive oil, to drizzle
Place the chopped prawns into a large bowl.
Squeeze over the lemon juice & zest, along with the salt.
Leave for 15-20 mins, or until it begins to turn opaque.
Add the diced pineapple, along with any juice you’ve saved and stir through the prawn mix. The combined acid from the pineapple & juice, will continue to cook the ceviche.
Lastly, add the chopped chilli, cucumber, shredded herbs and S & P to taste.
Squeeze a little more lemon juice in (if needed) or serve with the quarter lemon wedges, if you’d like more zest to the flavour.
Chill for 1hr before serving.
