I can’t remember a time when I didn’t love food in jars? In fact, I can’t remember a time when I didn’t love jars at all…period!
Sure the trend has come and gone over time. You can do a google search for Salads in a jar, Green juices & smoothies in a jar. Heck for Christmas, I even made these mix-your-own Cakes in a Jar. Here’s another ultimate indulgence, Cheesecakes in a jar.
With one fresh lemon. A pack of cream cheese. A little sugar, vanilla & adash of cream, you have the most instantaneous (ie.) fuss free dessert ever.
In fact, I never actually make a traditional cheesecake at home (gasp!)
Together, my cheesecake and I can sit quite content for an eternity of bliss & reality tv cooking shows on some cosy nights. Yes, my sweetheart is included in this too & sometimes, he just might be allowed, to bring an additional spoon ;)
But back to why you should really want to make these cheesecakes?
Well, they’re the coolest kind of mix-it-up and let your guests decorate their own cheesecakes at-your-next-dinner-party. Case in point, this previous recipe here for Pimp My Cheesecake, also kinda fun & calorific, I won’t lie!
You can actually transport these cheesecakes! Try skipping through a field of grass with your picnic blanket tucked up under your arm. You gently swing a basket of these goodies on your other arm, as the afternoon sunbeams catch on your face…

Lastly, but not least. Don’t you want to try this because they look that darn tasty and these gratuitous foodporn shots are just making you plain old hungry too!
Ingredients: makes 2 large serves to share, or for medium sized portions.
1 block (250g) of Cream Cheese,
1/2 cup of thickened cream
1/2 cup of caster sugar
1/2 vanilla pod, (scrape seeds out,)
Zest of 1 lemon, including juice of half that lemon,
1/2 packet of sweet biscuits crushed, (I’m partial to Arnott’s butternut snaps, myself)
50g butter, melted
Fruit to garnish, passionfruit, blueberries, etc,
In a medium bowl combine 50g melted butter and the half packet of biscuit crumbs.
Mix until it resembles a sandy texture.
Ladle into 2 large share jars, or 4 medium serving jars.
In a medium bowl, combine the cream cheese, cream, caster sugar & vanilla seeds (if using.)
Mix until smooth & lump free.
Add the lemon Zest & lemon juice, mix thoroughly and spoon the mixture evenly, between each jar.
Decorate each jar with a generous amount of passion fruit & blueberries.
Chill 1hr minimum, before serving.
