Here are some recipes for the time poor, including these jaffle iron pies, with Ham, Leek & cheese. Easily made in a flash!
Occasionally, I need some trusty Food Hacks in my life.
I know what you’re thinking? Food bloggers should make everything from scratch….Well confession, we can’t!
The wise know that there’s a time & place for a cheat’s recipe in the modern world.
Whether it be a simple piece of toast, with these smashed peas to feed yourself in a hurry. An easy no-bake dessert to feed your friends in a hurry. Or indeed a short cut recipe for these sausage rolls to feed a crowd in a hurry.
So the question today, is can you make a pie in 10 mins?
I say you can, if you have a Jaffle Iron & a sheet of ready made puff pastry!
First up, check the fridge, because you can’t make a pie without a filling.
Thankfully, there’s that trusty cube of Pancetta/streaky smoky Ham, which is always handy to have in little blocks in your fridge. For Sandwich fillings, soup bases, mini quiches and just a snack with your late night cooking show catch up’s after work!
The Ham is shortly followed by whatever green vegetable you have at hand. Be it sliced leek, grated zucchini as an option, or baby spinach
No toastie is ever…ever complete without cheese!
I dare you to show me a toasted sandwich without cheese, and I’d
show you the door! Whilst we’re on the topic of toasties, don’t even think of skimping on the butter ;)
This is the ultimate food-on-the-go! It requires one chopping board, one jaffle iron aka your (toasted sandwich maker) and a little imagination.
Best bit yet, is you don’t have to do a savoury version. There are many variations on spicing this up from Apple & Cinnamon, to Nutella & Banana?
Or you could go total carnivore and do a cheesy, chorizo & pea version!

1 sheet puff pastry,
1/4 cup chopped leek
1/4 cup diced pancetta
Melted butter, to baste the pastry.
