Apple, Coriander Sauerkraut & Sunday Schnitzels

Schnitzels are an ongoing theme here on cosy evenings, I’ve enjoyed Chicken Kiev, Chips & home style Slaw… in the past and this apple & coriander sauerkraut is the perfect accompaniment to a crunchy schnitzel. Simply omit the garlic butter in the (previous recipe) and add some warm steamed veggies on the side for this dish.

Time:15 mins

Ingredients:

1/4 savoy cabbage, shredded
1 brown onion, diced
1 apple, diced
1/2 lemon
Knob of butter
Few sprigs of coriander
Salt & pepper to season

Method:

Add the diced onion to a pan with a bit of the butter, sweat for a few minutes.

Add the shredded cabbage & diced apple, stir to combine.

Throw in the knob of butter and a good squeeze of the lemon. Season to taste and switch the heat off. Snip some coriander and stir through the sauerkraut. Set aside and serve with the schnitzel and veg.
