Big Biccies Bites!
These biccies are packed full of yummy bits, I’ve chosen Peanut butter, choc buttons and coconut-makes just over 1 doz big ones!
Few tbps of peanut butter
1/3 cup of choc buttons
1/3 cup coconut
1/3 cup oats,
1/2 cup of Plain Flour,
1/2 cup of sugar + a little more if you like them sweeter,
Pinch of salt,
Splash of milk
You’ll also need some Baking trays, baking paper, a mixing bowl, wooden spoon and ice cream scoop.
Preheat oven to 160C (320 F) Line your baking trays with some paper and set aside,
First, cut the butter into smaller cubes and place into a mixing bowl. Add the few tablespoons of Peanut Butter, mix together to combine and add the sugar along with a pinch of salt.
Stir in the whole egg, add the plain flour and all those yummy bits. You could add sultanas (raisins,) cranberries, almonds, the choices are endless. I’m sticking to oats, coconut and choc buttons today. Taste a little of the dough and (add little more sugar if you prefer a sweeter cookie.)
Mix until the dough starts to come together in the bowl, it should form a soft dough in the centre. Using the ice scream scoop, add a spoonful of the dough to the baking trays, space them evenly apart so there’s room for the biccies to spread out.
Bake for 8-10 mins maximum in the oven and rest on the tray for 5 mins before moving to cool on a wire rack, (that way they’ll continue to firm up but still keep that goey centre.)
Time to devour some with a glass of milk! (optional)
