Cheese & Sesame Sables
Cheese & Sesame Savoury Sables: yields 30
Time: 45 mins including baking time.
125g softened butter
125g plain flour
Handful of grated Cheddar
Handful of grated fresh or dried Parmesan
*adjust quantities* if you like more or less cheese, you can check out the pictures for my approximation
Pinch of salt,
Cracked pepper to taste
Sesame seeds to roll the dough in,
optional, add a generous dash of paprika for a smokey undertone in the sables!)
*tip* I like to measure my ingredients on paper over the scales, easy to dispose of and saves washing up.
You’ll also need a mixing bowl, a cheese grater, kitchen scales if using, a small knife and a couple of baking trays.
Preheat the oven to 210C, grease two baking trays with a little butter.
Combine the softened butter & flour in the mixing bowl,
Add the various cheeses, pinch of salt & cracked pepper, (add that dash of paprika, if using too.)
Mix lightly with your fingers at first and then use the palms of your hands to combine until you have a soft dough. (Be careful not to over mix as you don’t want the butter to melt quickly,)
Divide the dough into two log shaped pieces,
Sprinkle some sesame seeds over your work surface and gently roll each log in the seeds. You should notice it becomes more manageable immediately,
Gently cut a bite sized piece out, shaping to 2-3cm, (you can halve this if you want smaller bite size biccies)
Continue until all the dough is cut and bake for 20-25 mins, or until golden brown. (I baked mine for 20 mins, turned off the oven and left them to cool for the last 5 mins inside,)
