I dream of Genie…Spicy Vegetable Couscous
I do love this grain! I love it’s versatility almost like eating fluffy clouds nestled amongst spicy vegetables and nuts. Take a bite and dream of far away destinations…
Ingredients:
Chopped/Assorted vegetables from zucchini, tomatoes, capsicums (anything that takes your fancy!)
1 cup Couscous (I like a flavored variety from Ainsley Harriots line) plain is fine too
Spring Onion stem, sliced
Chilli sliced (spicy if you dare)
herbs to garnish (coriander or basil etc)
1/2 tsp Paprika
1/4 tsp Cinnamon
Olive Oil
Pine nuts
Stock (I used chicken)
Freshly boiled water,
Salt & Pepper to taste,
Time: 20 mins approx
Method:
Sauté chopped zucchini in a sizzling pan with olive oil,
Add the other various vegetables/spring onion/chilli and stir to combine
Once the vegetables turn golden, add the paprika and cinnamon,
Scatter pine nuts into pan and (toast) on the side of the vegetables,
Add couscous and stir again,
Finally add a small splash of liquid (stock or water) and stir briskly, be careful to only add a few splashes at a time until it’s absorbed.
Also if using a non seasoned couscous, add a good pinch of salt and pepper,
Once the couscous has absorbed all the moisture cover with foil, rest for 5 minutes.
After resting, remove the foil. Take a fork and fluff the grains.
Serve and garnish if preferred!
