Old School Custard Tart
Time: 45 mins
Ingredients:
4 egg yolks,
1 cup of cream + 1/2 cup of whole milk,
1/2 vanilla pod, or 1/2 tbsp vanilla essence
1/2 nutmeg seed, or use 1 tsp ground
1/4 cup of caster sugar, + extra to sprinkle on top afterwards,
Pinch of salt
Cube of butter (optional)
Pre-baked shortcrust shell or (feel free to make your own of course!
You’ll also need a mixing bowl, whisk and some measuring cups too.
Method:
Preheat oven to 160C (320F)

Into the mixing bowl add the sugar, vanilla seeds from (the pod) and the four egg yolks. You can also add a pinch of salt over the egg yolks too,

Next step is to add the milk and cream,

Whisk until combined and pour into shortcrust shell, you can also add the cube of butter too if you like. Grate the nutmeg over the top of the custard mix too.
Bake in the oven for 20-25 mins. Check part way to see if the crust is browning too quickly (sadly, I neglected mine and it burnt!) once the time is up, rest the tart in the oven for 5 mins after and finish with a little more nutmeg and sprinkle of sugar too.

Wow, this is something to bake one of these days! I make flan but it never occurred to me to top it with nutmeg and a bit of sugar. Super ideas!
