Put your hand up if you love Turkish Delight?
There’s something so wonderful about the jelly like bite of a pink & pearlescent square, as the icing sugar sticks onto your fingers! To this day, it’s still one of my dad’s favourites and I think my mum is quite partial to it too.
Every major birthday, celebration, Christmas or anniversary, a box of Turkish Delight, (along with socks & peanuts,) would be requested too. Truth be told, I’m not sure how many squares my dad would actually get, but you can be sure there were a few keen fingers in there.
Indeed, imagine my delight no pun intended, when I discovered that this candy is quite easy to make and so very quickly at that too.
In fact, I’m talking 20 mins prep, max! Made effortlessly in your microwave. With a nice deep dish of Turkish Delight setting thereafter on the counter, or your fridge.
Bonus, there’s no slaving over a hot stove. Minimal effort required and you will be less likely to scald yourself with the dreaded sugar burns.
On the subject of sugar burns, if you should ever happen to come across my sister on the blog here, she will tell you of the time I scarred her for life with the toffee pan… whoops…
2 cups sugar
1/4 cup powdered gelatine
3/4 cups cornflour
1 & 1/3 cup icing sugar
1/4 tsp cream of tartar
1/2-1tsp of rosewater
few drops red food colouring
You will need an extra cup of icing sugar (with a 1 & 1/2 tbsp) of cornflour, to dust the mixture after it’s set.
